4 slices streaky bacon
200g chicken fillet
250g fresh Brussels sprouts
2 sweet and sour red/yellow apples
2 tablespoons coarse mustard
sea salt and freshly ground pepper
2 tablespoons fresh thyme, chopped finely

The Autumn Hussel that we are making today really tastes like autumn! The delicious apples and sprouts let us know that we are really heading towards winter. But after the long summer holiday, autumn is so cozy and soon we will be looking forward to winter again. But today we are eating a real autumn dish, because it is still October ;))
How to make an Autumn Hash with chicken, Brussels sprouts and apple
Preheat the pan properly.
Fry the bacon in it's own fat.
Let it drain on kitchen paper.
Boil the clean sprouts for 10 minutes.
How to fry the chicken
Fry the chicken in the bacon fat that is still in the pan
Cut the chicken fillet into strips.
Fry the chicken strips nicely golden.
For about 5 minutes on each side.
Remove the chicken from the pan.
Wash and slice the apples.
Fry both sides nicely brown.
Apples out, chicken in the pan.
Place the chicken back into the pan with a dash of water and the mustard and let it simmer for 5 minutes
Let them simmer for 10 minutes.
Add the apples and thyme to the pan.
Season the hash with sea salt and freshly ground pepper
Serve baked potatoes on the side with the Autumn Hash.
Finally you crumble the bacon over the dish.
