Dry:
100g all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
Wet:
60ml buttermilk
40g honey
½ teaspoon vanilla extract
Other:
60g vegetable butter, softened
75g caster sugar
1 organic egg

You can read exactly why we need bees in this book, and believe us, for quite a few different, very important things. But... also very nice, bees make the most delicious honey for us. And today we are making little honey cupcakes with it, to show the bees on Earth Day how happy we are with them!

Here is how to make Mini Honey Cupcakes

Place paper cupcake cases in the baking tin.

Stir the flour, baking powder, and salt togethe, set aside.

Stir together buttermilk, honey, and vanilla and set aside.

Beat in the mixing bowl the butter with the egg.

Now gradually add the dry and wet ingredients to the mixer bowl alternately, starting and ending with the dry ones

Briefly mix in a little flour.

Then briefly beat in some honey mixture.

Alternate and end with flour.

Preheat the oven to 175°C

Now you have a smooth, slightly thinner batter, scoop it with a small ice cream scoop

Scoop balls of batter in the cases,

We end up with 19 cupcakes.

Bake the cakes for 15-18 minutes.

Let cool a little in the baking tin.

Then move the cakes to a wire rack.

Remove the paper cases and serve the Honey cakes still warm.

The honey cakes are disappearing super fast, and that's because they are so super yummie!
