Shopping list for the dough
500 grams potatoes, equal pieces
3 tablespoons fresh breadcrumbs
1 tablespoon flour
6-8 tablespoons oil, for frying
For the filling >        
3 tablespoons sunflower oil
1 small red onion, finely chopped
20 grams fresh ginger, peeled and finely grated

For the filling
1 green chili pepper, seeded and finely chopped
½ teaspoon Kashmiri chili powder +  ½ teaspoon garam masala
1 teaspoon ground cumin + 1 teaspoon mango powder
(amchoor) or the juice of ½ lemon
75 g (frozen) peas
2 tablespoons finely chopped parsley

For Diwali, we're making a delicious snack with potatoes and fresh vegetables. We're also making a lovely carrot side dish. It's an unfamiliar dish for the monsters, the recipes come from India. We are curious if they will like the taste! We serve the dishes with two dips, one is tomato ketchup, and we make a tamarind-date chutney. The monsters know what Diwali is all about. There's a little boy with Indian roots in their class. His mother came to school last year to do Divali crafts with them, so sweet, and they loved it! But these snacks? They want to look and smell them first, but they look delicious and smell nice too. A small bite and...it tastes sweet! Yes, Aloo Tikki itastes really good!

How to make Aloo Tikki
Wash and peel the potatoes and cut them into even parts

Put on the potatoes and add the salt.

Bring the water to a boil and then turn the heat down.

Boil the potatoes for about 20 minutes until cooked and drain them..

Place the potatoes in the food processor and mash them.

Mix the breadcrumbs with the flour

The dough is very sticky, so wet your hands.

Add the flour mixture to the dough.

Stir and knead it together.

Place the dough in a clean moist bowl.

Cover the dough and set aside for now.

How to make the filling

Cut veg and herbs finely.

Squeeze halve the lemon.

Fry the onion until it is soft.

Stir in the ginger and spices.

Also add the lemon juice.

Stir it all together.

Add the peas to the mixture.

Remove the pan from the heat and place the vegetable mix in a bowl

Flatten the peas coarsely using a fork.

Stir the parsley into the mixture.

Divide the potato mixture into small pieces.

Work with wet hands, the dough is still very sticky and wet the bottom of the glass as well

Press the pieces until flat.

Put some filling on top.

Fold the edges upward.

Gently press the balls closed.

Flatten the Aloo Tikki slightly, like a mini hamburger and place them on a baking tray lined with waxed paper

Place the snacks in the refrigerator for 20-30 minutes to firm up before baking

Fetch the Aloo Tikki.

Heat the oil on medium heat

Place the Aloo Tikki in the hot oil!

Fry the snacks until golden and crispy on both sides.

Serve the Aloo Tikki with both sauces and the carrot ribbon salad.
