1 package speculoos
70g butter, melted
2 packages (2 x 100g) MonChou (room temp.)
250 ml heavy cream
1 can tangerine wedges or 1 fresh tangerine
We're making delicious little cheesecakes that don't require an oven. The monsters love them, and so do we. The cakes are quick to make and delicious—you couldn't ask for anything better. We'll make some tea and our free weekend is off to a great start!
How to make no-bake mini cheesecakes
Break the speculoos cookies in the food processor.
Grind the cookies until they are fine crumbs.
Place the butter in a saucepan and melt it on low heat.
Stir the melted butter firmly into the cookie crumbs.
Make sure the butter and crubs are well mixed.
Place paper cupcake cases into you baking tin(s).
Spoon and press the crumbs firmly into the cupcake cases.
Place the baking tins at least 15 minutes in the refrigerator, we leave them an hour
Beat the Monchou nicely smooth in the mixer.
Add the cream and mix smooth again in one minute.
Spoon the mixture into the cases and smooth it out.
Place the cheesecakes in the fridge and let set for at least 1 hour.
Remove the paper cases and place the cheesecakes back in the fridge until your ready to serve
Place mandarin wedges on the cheesecakes.
Make tea and/or coffee and serve the cheesecakes immediately!
