Little Winter cupcakes

Shopping list for 24 mini cupcakes
125g caster sugar
125g butter (room temperature)
1 large organic egg (room temperature)
1 teaspoon vanilla extract
125g self-raising flour, sifted
2 tablespoons milk
Decoration
White and light blue fondant icing
Optional
250 ml double cream
2 tablespoons sugar

The mini monsters are having much fun skating on the ice rink. When they get home, they'll need some time to recover from all the winter fun. That's why we're baking mini-winter cupcakes for them, in two varieties, so everyone's happy. With warm tea and some good books on the side, it'll be a wonderful afternoon!

How to make little winter cupcakes

Place the soft butter and sugar in the mixer.

Mix until creamy and then mix in the beaten egg.

Briefly mix the vanilla extract into the batter.

Add 1/3 of the sieved flour and fold it in.

Repeat the flour addition twice

Fold in the flour until you have a smooth batter,

Finally fold the milk into the batter.

Place paper cases into the baking tin.

Preheat the oven to 180°C

Fill the cases up to 3/4.

Bake the cakes for +/- 20 minutes.

Let the cakes cool in the baking tin.

Move them to a wire rack.

While the cupcakes cool completely, cut out fondant icing
 
 

Knead blue fondant icing.

Roll it thinly and cut out circles.

Then roll white fondant thinly.

Cut out snowflakes.

Stick the snow using water on the circles.

Beat the cream with the sugar.

Spoon it into a piping bag.

We pipe whipped cream on half of the cupcakes.

So all the mini-mosters can enjoy them ;))
