500 ml whole milk
30g caster sugar
1 free-range organic egg + 1 yolk
15g custard powder
140g speculoos spread
250 ml double cream
2 tablespoons caster sugar
a few speculaas biscuits

Tomorrow it is finally the date...December 5th, it's St. Nicholas Eve! Today we're making a delicious Speculoos pudding that needs to set overnight in the fridge, so it'll be perfect tomorrow. Delicious with whipped cream and speculaas!
How to make Speculoos Pudding
Break one egg and separate another.
Add the custard powder.
Stir until well combined.
Place the milk and sugar in a pan.
Place the pan on low heat and bring the milk and sugar - stirring now and then - almost to a gentle boil
Pour a splash of the milk into the custrard mixture and stir it in.
Pour the custard mixture back in the pan and place the pan on the heat.
Allow the mixture to thicken slowly, while stirring constantly.
Remove the pan from the heat when it starts to thicken.
Add the speculoos to the hot mixture.
Let it melt for a moment, stir to combine and pour it into glasses.
Place the puddings in the refrigerator to set.
Cover the puddings and let it sit in the fridge overnight
Day 2
Before you serve the puddings
Place the cream and sugar in the mixer.
Beat until stiff peaks appear.
Pipe whipped cream rossets on the puddings.
