175g flour, + extra for rolling out
1/2 teaspoon bicarbonate of soda
1 teaspoon gingerbread spices
125g butter
175g light soft brown sugar
1/2 free-range organic egg
2 tablespoons golden syrup
2 tablespoons buttermilk
handful peeled walnuts
Walnut men are the perfect biscuit for St. Martin's Day, they are delicious, spicy winter cookies. Gingerbread spices go into the dough, which gives these cookies such a wonderful wintery taste. Delicious with a cup of tea or a mug of hot chocolate to go with them, after the parade in the cold wintery night!! If you do not have a foodprocessor you can use a regular mixer.
Here is how to make walnut men
Sift the flour with baking soda and gingerbread spices.
Stir it together and place it in the food processor.
Add the butter and pulse it until combined
It is starting to look like dough, but it is not ready yet.
Beat the egg until frothy.
Add the vanilla extract.
Stir it and add to the dough.
Pulse it briefly.
Add the buttermilk and pulse briefly
Knead the dough by hand.
Place it into a clean bowl.
Cover the bowl and let the dough rest in the refrigerator for at least half an hour
How to make the little men
Roll out the dough evenly to a thickness of 1cm .
Cut out the little men and place them on the tray.
Place the walnuts on the men and press the arms on.
Place the men another 30 minutes in the fridge.
Preheat the oven to 180°C / 160°C fan
Bake the walnut men for 12-15 minutes.
Allow the biscuits to cool completely on a wire rack.
